Sweet and Spicy Pepperoni Pizza 


Ingredients:
For The Dough
3 Tsp active dry yeast
1 1/4 cups warm water
1 Tsp olive oil
3 Cups all-purpose flour or bread flour
1 Tsp course salt
1 Tsp flax seed
1 Tsp chopped garlic

Directions:
Mix together flour, salt, flax seed, garlic and set aside. Mix together yeast and water in a large bowl and let sit for about 10 minutes.  The yeast should start to bubble slightly. Add dry mix to the water and stir until the dough is just slightly sticky. At this point you can add water or flour a tsp at a time until you get the right texture. Use your hands to roll into a ball. Drizzle oil over the dough and cover for 30 minutes.  Dough should double in size. If you are making in advance you can leave in the fridge overnight and take out 30 minutes before using.

For The Pizza
Mozzarella Cheese  (I used 2% shredded)
1/2 Cup Sliced Sweet Onion
2 Tbsp Sweet Pepper Rings
2 Tbsp Marinara Sauce
3 oz Pepperoni
1/4 Cup Black Olives
Pinch of crushed red pepper
Directions: 
Preheat oven to 400 degrees. Lightly flour your dough and either roll out or stretch out onto a floured or greased pan. Spread marinara sauce over dough. (You can definitely use more sauce. I found the pizza has a better texture when I use sparingly.) Add the rest of the toppings and bake for 30 minutes or until dough has started to brown. 
I personally love all pizza equally. Over many many many yummy mistakes I think I have finally perfected my pizza technique ... until I find a better way. I used to cook the dough before adding my toppings, but it actually comes out so soft and drenched in sauce when I cook everything together. Unfortunately, I hardly ever make a meatless pizza because heaven forbid my boyfriend have a meatless dinner! If you do not have time to make the dough Whole Foods and Publix both have really awesome whole wheat dough for only $3. Whole Foods is usually better for a thin crust and Publix for a fluffy crust.
